Look: Yellowish with green olive-coloured mold spots and irregular holes. Smell: Fermented cheese. Taste: Creamy, hot spice from fermentation, a little bit salty. Feel: Very fatty, semi-hard firmness, and it quicly melts to a fat sour cream consistency. Wine pairing: Wines with good acidity and no tannins.
